South Beach Diet Recipe
The following recipe is easy to make and can be a TV snack, a lunch snack at work or as a serving dish to be eaten for special occasions. I call it my Fiesta Mexican low-carb diet.

This is what you need:

1 cup mayonnaise
3 plum tomatoes
1 vine ripe tomato
1 small can sliced black olives
3 cloves of garlic
1 large onion, white
32 oz shredded cheddar cheese
1 package of celery

Diced tomatoes, 3 eggs, cut into small pieces. AlsoCubes, garlic, onions and black olives, or you can put them in a food processor if you have one.
Mix the mayonnaise, tomatoes, olives, garlic, onion, and about 20 grams of cheddar cheese in a bowl. Then add the blended ingredients in a pan, 9x9 or 8-1/2 by 12 Sprinkle remaining cheese on top of the mixture. Sliced ripe vine tomatoes into slices and put on the cheese for a nice presentation. Cover with foil and bake at 375 degrees for 35 minutes. After35 minutes, remove foil and bake at 350 degrees for 10 minutes.
Meanwhile, chop the celery, cut into slices of diving.
From the oven and let cool for about 15 minutes.
Remove the dip with you sliced celery a Tupperware and work and you have a great snack at work or when you feel like a snack. There is also a great party food to stay the course is hard to resist at times of special occasions!
